Sprinkle over the meaty side of the ribs, and rub into the meat. Let stand while making the dressing. Preheat the oven to 325 degrees F (165 degrees C). In a large bowl, combine bread cubes, celery, onion, garlic powder, salt, 1/4 teaspoon black pepper, and 2 teaspoons poultry seasoning.

Place one rib section on a lightly greased rack in a shallow roasting pan. Spoon stuffing over ribs. Place remaining rib section over stuffing; tie rib sections together. Sprinkle remaining salt, pepper, and sage over ribs.

PLACE half the stuffing on the meaty side of each rack of ribs. Roll, bone side out to enclose the stuffing and secure with kitchen string. Place the rolled ribs upright in a large roaster. Cover and roast in the preheated oven for 2 hours or until the meat is very tender.
